After more than 2 years to obtain the building permit, Jean-Marie Esposito took up residence on the Quais de Queyries in October 1998 with l’Estacade restaurant.

Chef at L’Estacade since 1995, Frederic Montemont learned his trade with the great starred chefs Guy Martin and Alain Ducasse. He joined the Estacade team at the very beginning and with Jean-Marie Esposito forms a rather explosive duo in the kitchen !
